Stuffed Pepper Soup

Stuffed Pepper Soup is a cozy, budget-friendly meal that captures the essence of classic stuffed peppers in a delectable one-pot dish.

Ingredients:

  • 1/2 lb Italian sausage
  • 1/2 lb lean ground beef
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 cups low-sodium chicken or vegetable broth
  • 1 (14.5 oz) can salsa-style tomatoes
  • 3/4 cup jasmine rice

    4. Season with salt and pepper. Serve hot.
